Really, When Jack is on he's extremely difficult to strip of the puck, he can also stick handle in tight areas and through people. What I see of Matthews is lateral passing to a wing rather than going 1:1 with the defender. I don't think this is due to stick handling, I think it's because he uses his strength and reach to shield it well and keep it out of reach of the defender. But he regularly loses puck battles in tight spaces. Matthews, meanwhile, looks like Pat Kane when operating with little room.
