They signed Shawn Szydlowski last year around this time. I found this: A player with a great offensive talent, a good peripheral vision, soft hands and an incredible skating, Gourde can also play with an extra edge and is not afraid to mix it up even tough he is not very big as shown by his 70 penalty minutes this season. Gourde also has eight game-winning goals (24.24% of his 33 goals), which shows he can produce under pressure in clutch situations. Players in the CHL range in age from 16 to 20, meaning the older guys have a serious advantage over the rest of the league. Also, I think the guy who led the Q in points last year was also undrafted, so it's not clear that success in the QMJHL leads to success at the next level (maybe the hockey equivalent of how some star college QBs don't have the skill set for the NFL?). At some point one of these diamond in the rough longshots will pan out. I wouldn't count on it, but it won't hurt to try. Rochester could use the players and it's not a big/major investment. Your dead on with the overage player thing. He has essentially doubled his number with each season in the league. Still, it's enough for someone to give him his shot.
