So the NHL is doing a matchup vote of the great uniforms.  They have a picture of Gilbert Perrault in the old Sabre white and then in one in the Navy Blue with Jack Eichel.  You can do as many matchups as you can stand.  The home white with Perrault is winning in every match up I chose.

How come most of the pre-1960s uniforms are grey?

Haven't checked the site, so not positive to what you're referring, but NHL sweaters were most definitely not gray prior to 1960. They've always been colored though several teams only had 1 set prior to the TV age. Red & blue are dissimilar enough for the players & fans in the building to know which team is which. However, for home viewers watching on a little b&w set, having 1 squad wearing white was a huge assist.

 

And as a matter of trivia, TV is also the reason for the red line not being a solid red. Home viewers could tell the lines apart.

I think what has confused our esteemed Eleven is the fact that they had no colour film back in the day.  They are all black and white photos, which leads to varying shades of grey.
