It does curdle and clot up the milk a bit. But... it's definitely way more on the pickle end of the spectrum than a cucumber in a spoiled milk or... I guess the far end of the spectrum would be like cucumbers in yogurt (tzatziki). It's definitely not suited to everyone's palate.

For example, I love this dish, but a very similar approach of creamy pickled herring? Completely disgusting!
